Snickerdoodle gormet popcorn

So when it comes to a cookie, nine times out of ten I would choose a milk chocolate chip, oatmeal, peanut butter cookie over a snicker doodle or a sugar cookie. My husband thinks I am crazy because he is the complete opposite! However, when it comes to gourmet popcorn, even though there is no milk chocolate, oatmeal, or peanut butter involved, I think this one takes the cake -or should I say “takes the popcorn”:)!

This is the good stuff with its cinnamon sugary goodness drizzled with fine layer of white chocolate, it is a combination that your taste buds will crave. Perfect for a movie or game night with company, or just a great way to show the people you love you care about them, because its not just normal popcorn (even though I cannot find any fault with normal popcorn. I think it is the food of the Gods). On top of that, it is easy, with not a lot of clean up, and it can be made ahead of time and still taste great.

*Note: I cooked my popcorn over the stove because I like it the best, but I am sure you could use an air popper, or microwave popcorn if that’s all you had and it would still taste great!

*Serves 8

Ingredients:

3 Tablespoons olive oil

2/3 cup fresh popcorn kernels (1/3 cup per stove top batch)

3 tablespoons melted butter

1/4 cup granulated sugar

1 teaspoon cinnamon

3/4 cup white chocolate chips

2-3 tablespoons heavy cream

Directions:

1. Heat oil in large pot over medium heat. Add 3 popcorn kernels to test if it is hot enough. Place lid on pot.  Once kernels pop add 1/3 cup of kernels and close pot with a lid. Cook, shaking the pot with two pot holders,  until popping stops about 1-11/2 minutes. Transfer to a large bowl.  Wipe out pot with paper towel, and repeat with the remaining 1/3 cup popcorn for a second batch. Drizzle popcorn with melted butter. Stir to coat all pieces. Place sugar and cinnamon in a small bowl and stir to combine. Sprinkle over buttered popcorn, stirring to coat all pieces. Pour onto a parchment lined baking sheet.

2. Melt chocolate chips and heavy cream in the microwave stopping the microwave to stir every so often until melted and smooth. Take care not to burn it. Place in a ziplock bag (see picture below for an easy way to spoon it into a ziplock bag). Cut tip of bag off an Drizzle over popcorn and let harden, about 20-30 minutes. (Can put it in the fridge for quicker hardening).  Store in an air tight container .
