Easiest Digger Birthday Cake! Happy Birthday Charlie!

Charlie finally turned one! And quite honestly I think we made a big deal out of it more for Lucy (who will be 3 this summer). I wanted to do something cute and little boyish, but I didn’t really have time to put a lot of work into a cake.

And then… I had an epiphany…a digger cake! A chocolate cake with chocolate frosting and digger trucks on top digging into it! The beauty of this cake is that you can modify it however you want, and you can’t really go wrong!

In my head I imagined just one big truck on the cake digging in, but then the dollar store by my house only had small little trucks, so I opted for a smaller version instead! We loved how it turned out, and it was great because Lucy and Charlie were able to help decorate it. Actually, Brad is the artist in our family so he designed it! We used pretzels for logs, and chocolate Rice Krispies for dirt and rocks, but I’m sure you could use crushed up cookies or candy also!

So easy. So cute. So yummy.

Digger Birthday Cake

Ingredients:

1 Chocolate Cake placed on a piece of cardboard covered with tinfoil. (I just used a mix, but you can use homemade if you want).

chocolate frosting (recipe I used below)

digger trucks and cars

toppings: Pretzels, chocolate rice krispies, (or whatever else you want to use, chopped up candy, cookies, etc…)

Directions:

No real directions. Frost the cake. Place the trucks on the cake digging into one section of the cake if you have a digger truck. Place other foliage on the cake (the pretzels and candy). Enjoy!

Chocolate Frosting Recipe:

Ingredients:
2 3/4 cup confectioners’ sugar
6 tablespoons unsweeted cocoa powder (more or less depending on how dark you want it)
6 tablespoons butter, room temperature
5 tablespoons evaporated milk
1 teaspoon vanilla extract
Directions:
In a large bowl, cream butter until smooth, then gradually beat in sugar alternately with evaperated milk. Blend in vanilla.  Then add cocoa by the tablespoons until you reach desired darkness. Beat until light and fluffy. If necessary, adjust consistency with more milk or sugar.

  2. Thanks Stacie! Actually, I have been meaning to tell you that after you guys left on Sunday, they talked about Savanah in Sunday school and what a beautiful girl she is! So cute! Great to see you guys!
